Zucchini Mushroom pasta
Ah, life in unemployed land, living in a friend's basement. Here is today's creation. I have reached the point where I leap into action at 4 p.m., knowing my housemate will come home soon. This was quite yummy.
Vegetables
1 1/2 small zucchini, cut in quarters, lengthwise1/4 red bell pepper, cut in strips
1 handful forest mushrooms, sliced
garlic
basil to taste
Saute in olive oil until cooked but still crispy
Cooked pasta
Cream sauce
1/4 cup ground walnuts
3 cloves roasted garlic
3/4 carton whipped cream cheese
basil
black pepper
blend in food processor, in order listed above. Transfer 1/2 to small skillet and heat slowly with 1/4 cup olive oil and 1/2 cup milk. Heat and stir until well blended and creamy.
In a big bowl, combine pasta, vegetables and cream sauce. Toss. YUM.

Peach Upside Down Cake
I tried a recipe from the Rodale's cookbook for Peach Upside-Down cake, and it was quite tasty. It seems what I'm really doing with all this unemployment time is turning into a pretend 50's housewife. I'm doing a lot of cooking for my bachelor friend who's letting me live in his basement. It works out well for him, because he gets to eat a lot, but I'd really rather have a job.
